OSCAR THE GROUCH PASTA:

Ingredients:

3 large broccoli crowns

1 16oz pasta (your favorite kind)

1 tsp salt

a little butter

Chicken (I usually boil and then cut into small pieces

Directions:

Boil the broccoli until it is extremely soft

Drain the broccoli and add the salt and butter

Mash the broccoli until it becomes a sauce

Add to the boiled pasta

Add sliced chicken

Late Night Quesadillas

Flour tortillasGrated cheddar cheeseCan refried beansAdd aditional toppings such as meat, chicken, or veggiesHeat skillet over medium heat.  Butter the side of tortilla that will face skillet.  Top with cheese, beans, and additional toppings.  Place another tortilla on top and butter the top of it.  Cook until tortillas are brown on each side and cheese is melted.  Serve with sour cream and salsa.  Enjoy your late night snack!Egg and cheese toastThis is a great pre-exam meal!2 eggs2 slices American  cheese2 slices BreadSalt and pepperPreheat oven to 400 degrees.  Place the bread slices on a baking sheet.  Toast the bread in oven until cheese is melted. Here are some more good recipes that are pretty easy and delish.

 

King Ranch Chicken

1/4 c margarine

1 med green pepper (chopped)

1 med onion (chopped)

2 cans cream of chicken soup

2 cans rotel and green chilies

2 cups cubed chicken ( i like to use rotisserie)

12 corn tortillas

2 cups shredded cheddar cheese

 

Melt margarine in large sauce pan and add peppers and onions. Cook over med heat until tender. Blend in soup, tomatoes, and chicken. Heat thru. Place a layer of tortillas in bottom of 9×13 sih. Then top with tomato mixture and sprinkle cheese. Repeat 2 more times. Bake 325 for 40 minutes. serve with ranch style beans or black beans.

 

Chicken Parmesan

1 jar spaghetti sauce

6 T parmesan cheese

6 small boneless, skinless chix breasts

1 1/2 c shred. mozzarella cheese

 

Pour sauce into 9×13. Stir in 4 T parmesan cheese. Add chix, turn breasts over to coat both sides and cover with foil.

 

Bake 375 for 30 minutes. Uncover and top with moz cheese and 2 T parmesan cheese. bake 5 more minutes or until chix is cooked thru and cheese melted.

In order to avoid putting on the freshman 15 pounds, here are 3 easy recipes for college student:
1.) Bagel Pizzas
plain bagels sliced
tomato sauce
shredded cheddar cheese
any additional toppings.
Preheat oven to 350 degrees.  Slice the bagles in half and top with sauce, cheese, and additional toppings if desired.  Place on a cookie sheet and bake for 15-20 minutes.
2.)Chili
ground turkey meat
1 T chili powder
2 can tomato sauce
1 can stewed tomatoes
Brown turkey meat over medium heat.  Cook until no longer pink.  Add sauce, tomatoes, and chili powder.  Reduce heat and simmer for 20 minutes.
Top with chopped onions and cheese.
3.)Chicken and Rice Casserole
4 boneless skinless chicken breasts
1 cup minute brown rice
3/4 cup water
cream of chicken soup
cream of mushroom soup
You will need a 9×13 dish to bake in.  Pour the rice into the baking dish.  Add water, chicken soup, and mushroom soup and mix altogether.  Top with the chicken.  Bake 350 for 40 minute

Make sure you don’t try and lift to much by yourself. Pack items according to weight and keep an eye on stairs and hallways in which you will have to move your furniture.5.) Feed the Troops. Your friends came to help YOU. Make sandwiches, order pizza, or take them out to a local diner. This can be effective if you have a long day, or ever need their help again in the future. Don’t Care: If you like to party and it’s all about the party…..here is a tip on looking for a place to live - Don’t Care. Odds are you will end up crashing at a place other than your own.2.) Distance is Key: If you have an 8:00 class for the semester, distance is your key to never getting there. Hey, at lease you have an excuse that you buddy might buy. Ability to Overlook - if you are a party man/woman, you have to have the ability to overlook some things when searching for a college apartment. Holes and bugs are something that will be there anyway when you order that late night pizza and leave it in the box next to the pile of beer cans you drank.4.) The Awesome Factor - Be creative. For example, it’s not a garage, it’s a potential in-house Bar. Also, make sure you tell everyone that even thought your landlord won’t turn on the heat, its still an awesome place to live. 5.) Hermit Hut - Make sure you find a place that you can put your roommate that never goes to class. Choose a room with very few windows and maybe a hole in the floor where he can say that someone came in and stole his books.
